I have a healthy culture going with always plenty of extra grains to share. I had not read before, but knew from my own experience, that the kefir cured candida. I had suffered from a chronic problem with it for 20 years and now no more. Forget those yeast starvation diets, drink something healthful and delicious instead. My own technique differs a bit from your recipe. I keep my grains going in a large jar covered with cheese cloth. Every three days (or so) I strain off the liquid and ferment it further in sealed bottles with 1/2 juice, or herb tea, or ginger tea with molassses (especially tasty) whatever I'm in the mood for. It does get sometimes excessively fizzy like you said, great fun for kids! To the kefir grains I add more organic sugar, non chlorinated water, and a small piece of pastuerized (by boiling) egg shell, minus the membrane. So easy, I don't even dissolve the sugar ahead of time and the grains have been growing exponentially, really, they double their mass every time I move them to a larger jar. Talk about playing with your food. I call them my food pets. Thanks again.

Water kefir is an amazing remedy for a wide range of ailments. With so many people taking antibiotics, washing themselves with soap every day, and living in clean, sterile environments, we are living in an epidemic of bacterial imbalance. Water kefir is a rich source of good probiotic bacteria, cheap, and quick and easy to make. Notice that its' bacteria thrive in a sugar environment â€“ and we live in an abundance of sugar, sweet refined foods, and carbohydrates.
I drink a little water kefir a couple of times each day, rinse my hair with it, put it on my skin where there is any sign of inflammation or other skin problems, wash my eyelids with it, and use it on keratosis, liver spots and any sign of skin aging. The effects have been remarkable after using it for a few months. My digestion is strong, keratosis are disappearing, as are liver and age spots. I feel really good and healthy. A thorough saturation of good bacteria, both inside and outside the body, helps create the symbiosis of microorganisms that is one of the pillars of good health and longevity.
