Virtually everyone has mild gut inflammation after eating gluten. A significant number of people show a variety of overt symptoms, often after many years, and very hard to connect the dots to the variety of ailments. The digestive inflammation interferes with nutrient absorbtion, particularly vitamin D. Long-term consumption of gluten (particularly wheat, but also all cereal grains) leads to a variety of autoimmune diseases, cancers and neuropathies. These are caused by reactions to the various wheat proteins, and also malnutrition from weak digestion.
