It took me awhile to figure out the migraine to gluten connection as the migraine occurred the day after consuming something containing gluten. I experimented for a week, not eating anything with gluten, then had a tiny sample of pumpkin bread, next day migraine. I went another few days without gluten, had a cookie - bam, next day migraine. I haven't eaten gluten since last October and while it is extremely limiting, it is better than having a migraine. I did some research and found that apparently for some people after gluten is digested, it interpreted as a protein that is invasive and your body attacks it which results in a migraine.

Virtually everyone has mild gut inflammation after eating gluten. A significant number of people show a variety of overt symptoms, often after many years, and very hard to connect the dots to the variety of ailments. The digestive inflammation interferes with nutrient absorbtion, particularly vitamin D. Long-term consumption of gluten (particularly wheat, but also all cereal grains) leads to a variety of autoimmune diseases, cancers and neuropathies. These are caused by reactions to the various wheat proteins, and also malnutrition from weak digestion.
